Baked Chicken Reuben

Ben and I made a tasty and simple recipe for dinner tonight.  Here’s how we made it:

  1. Place 4 chicken breasts in a baking dish coated in non-stick cooking spray.
  2. Cover chicken with 16 oz. sauerkraut. We used a can of sauerkraut that we purchased at the Dollar Tree for $1.
  3. Pour 1 1/2 cups of Thousand Island dressing over chicken sauerkraut mixture. We used fat free Thousand Island dressing.
  4. Place in oven and remove from oven 30 mins before the chicken is completely done.
  5. Add 4 slices or 8 oz. of swiss cheese to the top of dish and put back in oven until chicken is fully cooked.
  6. Bake until chicken is cooked. We used our meat thermometer to ensure the chicken was fully cooked.  If you don’t have one, get one.

I’m not a big sauerkraut fan but this dish was pretty tasty.  It was super easy to make and isn’t loaded with calories and fat.  If you like reuben sandwiches you are probably going to like this.  Ben gave it two thumbs up.  He is a big fan of reuben sandwiches.
