Super Easy Apricot Chicken

Ben and I have made this recipe a couple of times.  It is quite tasty and very very easy.  In fact, I just made some this morning in preparation for Ben’s dinner tonight and lunch tomorrow (I’ll be out of town).

  1. Spray baking dish with non-stick cooking spray and add 4-6 chicken breasts.
  2. Mix the following in a bowl: 1/3 jar apricot preserves, 1 packet onion soup mix, 1 cup Thousand Island dressing. We use sugar free preserves, Lipton onion soup mix, and low fat / low sugar Thousand Island dressing to make the recipe as healthy as possible.
  3. Cover chicken with mixture in #2.
  4. Marinade chicken in fridge overnight.
  5. Cook chicken until internal temperature is 165 degrees. We use our handy meat thermometer to determine when the chicken is done.  If you don’t have a meat thermometer, get one!
